Your pancakes... duuuuh.

Cuz it's National Pancake Day of course!!

Pancakes are pretty much one of my favorite things to make AND eat.. so today is extra special to me!

Cinnamon Roll Pancakes...

Yes you can thank me later.

Ingredients:

PANCAKES:

(makes about 8-10)

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 cup buttermilk

1 Tablespoon canola oil

1 large egg, lightly beaten

(or use the pancake recipe from Bisquick)

CINNAMON FILLING::

1/2 cup butter, melted

3/4 cup brown sugar, packed 

1-1 1/2 Tablespoon ground cinnamon

CREAM CHEESE GLAZE: 

6 Tablespoons butter

2 ounces cream cheese

1 1/2 cup powdered sugar

1 teaspoon vanilla extract

Directions:

1. Prepare pancake batter: In a medium bowl, whisk together flour, baking powder and salt.

2. Whisk in milk, oil and egg, just until batter is moistened (will be a bit lumpy.. that's OK) .

3. In another medium bowl, mix butter, brown sugar and cinnamon.

4.Pour filling into a pastry bag with a small tip .. should be about toothpaste consistency.

5. In a medium, microwave-safe bowl- heat butter and cream cheese until melted, stir until smooth.

6.whisk in powdered sugar and vanilla extract; set aside.

7. Heat large skillet over medium-low heat. Spray with nonstick spray.

8.Scoop about 3/4 cup batter onto the skillet. When pancake has started to cook a little, swirl in the cinnamon filling. When bubbles begin to appear on the surface, flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more.

9. Transfer to a baking sheet or platter and keep in a warm oven until ready to serve.

10. When ready to serve, spoon warmed glaze onto the top of each pancake.

National Chocolate Cake Day

Oh Em Gee. It's Chocolate Cake Day!!

as it happens i'm not a huge chocolate fan... but when it comes to cake i'm all about the cocoa bean!!

German Chocolate cake is probably my flavor-ite one to date... and here's my recipe... try it.. let me know what you think and above all.... enjoy yourself while making and eating it!!

Ingredients:

1 1/2 cups cake flour

1 cup white sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/3 cup butter, softened

3/8 cup buttermilk

1 teaspoon vanilla extract

4 (1 ounce) squares German sweet chocolate

2 eggs

3/8 cup buttermilk

2/3 cup flaked coconut

1/2 cup packed brown sugar

2 tablespoons cream

1/4 cup chopped walnuts

1/4 cup butter, softened

Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. Grease and flour one 9 inch square cake pan.

3. Sift the cake flour, 1 cup white sugar, baking powder, baking soda, and salt together.

4. Cream 1/3 cup of the butter or margarine. Stir in 3/8 cup buttermilk and 1 teaspoon vanilla.

5. Blend in the flour mixture and beat with an electric mixer on medium speed for 2 minutes.

6. Add the melted and cooled German sweet chocolate, eggs, and the remaining 3/8 cup buttermilk.

Continue to beat at medium speed for another minute more.

7. Pour batter into the prepared pan.

8.Bake at 350 degrees F (175 degrees C) for 40 minutes. Cool in pan for 15 minutes then frost.

To Make Frosting:

1. Combine the coconut, brown sugar, cream, chopped nuts, 1/4 cup butter or margarine.

3. Mix until of a spreadable consistency.

4. Spread over top of baked cake.

5. Broil 3 inches from heat until browned (about 3 minutes).

Serve and ENJOY!!

The last few days... weeks... have been a series of trials and tribulations for not only me, but ones i held very very close. I can't even begin to explain to you the lessons i have learned and the ones that keep slapping me in the face.
Which anyone can tell you... it's not a good look!

I'm stepping away from my usual forum to give myself a little bit of therapy. I thank you for bearing with me, i promise i won't let myself wallow too long... but for me.... talking requires energy, and that right now isn't what i have an abundance of.

So give me a day or two... maybe even three... and then we should be back to our regularly scheduled program...

A new Year. Aagin.

It's been a long one..2011... and i'm glad i got a chance to sit and really think about all of the goings on that occured over the past year. I have to say.. i have weathered a financial storm that would have brought most people to their knees... but as you all know i'm NOT most people and i happen to posses the strength to not only weather the storm.. but come out of it better than i went in. And i did.

I am truly grateful for the lessons and blessings of 2011 ...Friends... the BIGGEST blessing of them all... and i love each and every one of YOU ... flip side; i know now that while it may be Family First.. be wary.. for it seems that those who are closest to you still have the capacity to do you dirty .... i learned that once you've been treated well in a relationship, ANY relationship, there's no going back to any other way... . There was a lot of soul searching and separating the wheat from the chaff if you might. Realizing who is toxic is easy... cutting the poison.... a little harder... but necessary.

Love. Ah you found me again.

Not in the way that you might be imagining, although that love is around too... but the love of self is what i'm referring to.

I was given the gift of reclaiming who i was/am/and will be, and that friends, is beautiful!!

OF course there were other things.....LoillpaRUza 2011... Cocktail Rings n Things... Summer Fun and BBQ's a plenty....Northside benefits with my fave BOOTY, the Baby Sis turning the big 21.... trips to central city... My BEST Birthday PARTY EVER.... Karoake takeovers... lessons on love life and other mysteries... my IMAN WOODS Pin Up Shoot... ...sidewalk chalkin...Plankin Mary Jane... annual camping shenanigans... found a new favorite kitchen to play in...New babies all around.... old friends becoming new again...The DD got it's official dish of delish....The Poker Machine got renewed action ... tarot cards were read and magic happened..... The DD stalkers and jockers were in full effect....some friends moved far away.. some far aways moved back home...Basketball lockouts and season openers....the annual Bronco rollercoaster... The 420 score on yahtzee and beating out Auntie Phyl.. aka my mother.... aka the FORMER Yahtzee champ... and of course...love .. light and Tessmoker. *wink*

In looking back i can't help but revel in the present and look forward to the future...for no matter what it might hold... good or bad... love or loss... we're all in for the long haul!! ;)

SO .... i get a wall post the other day from one of my ADORED...

(yep 'favorites' had to join 'bees knees' since too many others have used and abused em... )

asking if i could make pumpkin chocolate chip cookies.... and OF COURSE ... I did a bit of research and came up with a pretty fantasmic recipe... So Enjoy..... lol i know you will.

THEE Best Pumpkin Chocolate Chip Cookies!!

Ingredients:

1 cup (2 sticks) unsalted softened butter,

1 cup white sugar

1 cup light brown sugar

2 large eggs

1 tsp vanilla extract

1 cup canned pumpkin puree

3 cups all-purpose flour

2 tsps baking soda

1/2 tsp salt

1 tsp Cinnamon
1 Tsp Pumpkin Pie Spice

2 cups (12-ounce bag) milk chocolate chips, not semisweet

Nonstick cooking spray or parchment paper

Directions:

1. Heat up that oven to 350 degrees.
2. Spray cookie sheets with nonstick spray

3. Using a mixer, beat the butter until smooth.
4.Beat in the sugars until the mixture is light and fluffy.
5. Beat in the eggs 1 at a time, then mix in the vanilla and pumpkin puree.
6. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
7. Slowly beat the flour mixture into the batter in fourths, making sure it gets incorporated
8. Stir in chocolate chips.
8. Throw heaping tablespoons of dough onto the readied cookie sheets
9. Bake for 15 to 20 minutes, or until the cookies are browned around the edges.
10. Remove the cookie sheets from the oven and let them rest for 2 minutes.
11. Take the cookies off with a spatula and cool them on wire racks.

Rocky Road...not a super great way to travel... yet such a great Ice Cream... and an even better BAR!

Now let's collab with a S'more... and all i can say is you'll be wanting s'more!!

ROCKY ROAD S'MORE BARS
Ingredients:
1/2 c. butter
1/2 c. brown sugar
1 c. flour
1/2 c. graham crackers, crumbled
2 c. miniature marshmallows
1 (6 oz.) pkg. chocolate chips
1/2 c. chopped walnuts
Procedure:
1. Beat butter and sugar until light and fluffy.

2. add combined flour and crumbs; mix well.

3. Press onto bottom of greased 9 inch square pan.

4. Sprinkle with remaining ingredients.

5. Bake at 375 degrees for 15 to 20 minutes or until golden brown.

6. Cool. Cut into bars.

DIY Pumpkin Spice Latte

For those folks who crave a Pumpkin Spiced latte all year long...

here's how you might go about that.....you're welcome.

Ingredients:
1/2 cup whole milk
1 tablespoon unsweetened canned pumpkin puree
1 teaspoon packed light brown sugar
1/4 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1 cup hot brewed, strong coffee
2 tablespoons half & half cream
1 teaspoon granulated white sugar, or more to taste
whipped cream, optional
ground nutmeg
Directions:
1. In a glass measuring cup or microwave-safe bowl, whisk together milk, pumpkin, brown sugar, spice and vanilla. Microwave for 1 to 2 minutes- watch closely and remove it from the microwave when the milk is hot and frothy.
2. Pour the pumpkin milk into a tall mug or glass. Add hot coffee. Pour in the cream. Add a teaspoon of sugar. Stir, and taste. Add more sugar, if desired.
3. Optional, but oh so good... add whipped cream on top and a sprinkle of nutmeg. Serve immediately!

Chicken Pot Pie... Diva Steeze

I love a pot pie... in fact i don't know many people who don't, and since we have FINALLY approached cold weather and warm food season...i started out my fall culinary tour with this gem.

Hope you enjoy.. since i know you love pot pie and me!! LOL

What you need:

2 chicken breasts,cubed

1/2 cup onion, chopped

1/2 cup of chopped carrots

1/2 cup of chopped celery

1/2 pkg of sliced fresh mushrooms

2 cans cream of chicken soup

1/2 cup milk

1 box Pillsbury pie crusts

What you need to DO;

1. Preheat oven to 400°Fdegrees.

2. Sauté chicken andonions in a skillet with oil or butter until chicken is no longer pink inside.

3. Prepare one pie crust in 9" deep pie pan.

4. In separate bowl combine soup, onions, chicken, mushrooms, milk, carrots and celery.

5. Pour mixture into pie shell

6. Top with second pie crust, seal and cuta slit in top to release steam.

Bake for 30 minutesor until golden brown.

And i'll be damned if i can't find what it's supposed to look like after cook time..oh wait... hold UP!!

There is SO much to do this weekend if you are a Fall lover and happen to be in the Mile High City... (Denver, CO if you are not in the know)!!

So grab your lil one.. or the one you blow kisses too... and pick a pumpkin.. ride a hay drawn carriage... and drink some Cider.. Cuz It's OCTOBER and it's time to fall in love with FALL!!

1. The Denver Art Museum is having a FREE day ... Saturday Oct. 1st

2. Four Mile Historic Park will be having THEIR Pumpkin harvest Festival Saturday Oct. 1st and Sunday Oct. 2nd. from 10am to 4pm both days. Admission is FREE. 715 S Forest St, Denver.

3. Feeding Many's Fall Festival is on Sat. October 1st from 10am- 6pm. Admission is also free. 5890 S Alkire, Littleton

4. Cider Days at Belmar Park .... Sat. Oct. 1st and Sunday Oct. 2nd. Admission is $7 for adults and $4 for kids. A lot of fun here!!

5. The Horseshoe Craft and Flea is another must see stop... Sat. Oct. 1st from 9am-4pm . Admission is FREE.

Pumpin Up the Pumpkin!!

I am SO glad that it is fall!!! Officially anyway!!! Absolutely my FAVORITE time of year.... not only does fall mark the end of horrid hot weather... it also is the 'kickoff' to Football season.. Hoodie weather... Comfort Foods.... Hot Apple Cider/Hot Cocoa/Coffee drinks.... leaves turning beautiful colors...My BIRTHDAY!!!!... and of course, and PUMPKIN EVERYTHING!!!

I am basically gonna spend an entire weekend dedicating myself to the procurment, cooking and storing of these beautiful delicious gourds!!
First up.... Pumpkin Cinnamon Roll Pancakes!!!!
... Yeah.. Thank me Later.

Ingredients:

CINNAMON FILLING:
1/2 cup (1 stick) salted butter, melted
3/4 cup brown sugar
1 tablespoon ground cinnamon

CREAM CHEESE ICING:
4 tablespoons (1/2 stick) salted butter
2 ounces cream cheese
3/4 cup powdered sugar, sifted
1/2 teaspoon vanilla extract

PANCAKES:
3 cups whole milk
1 cup pure unsweetened pumpkin puree
2 large eggs
2 tablespoon canola or vegetable oil
2 tablespoons apple cider vinegar
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
2 tablespoons pumpkin pie spice (see Tips below)
1/2/ teaspoon salt
1 tablespoon packed light brown sugar

Directions:

1. In a small,microwave-safe bowl- heat butter, brown sugar and cinnamon for 40 to 60seconds, just until butter is melted. Whisk the filling ingredients togetherand then pour it into a sandwich-sized zip baggie. Zip up the baggie and lay iton the counter while you prepare the pancake batter.

2. In a medium microwave-safebowl, heat butter and cream cheese 30 to 60 seconds, just until butter hasmelted and cream cheese has softened. Whisk in powdered sugar and vanilla andcombine until smooth. Set the icing aside.

3. In a large bowl,whisk together milk, pumpkin, eggs, oil, and vinegar. In a separate bowl, whisktogether flour, baking powder, baking soda, pumpkin pie spice, salt and brownsugar. Add the dry ingredients to the pumpkin mixture and stir just until allis moistened.

4. Check on your cinnamon filling: Open up thebaggie again and give it a good stir to re-incorporate any butter that may haveseparated. You want the mixture to thicken a bit- it's best when it's similarto the squeezing texture of toothpaste . Don't try to use the filling for the pancake swirl unless it hasthickened as it will be too runny! Snip off a small piece of the corner of thebaggie.

5. Preheat a large skillet orgriddle to medium. Use an ice cream scoop (or ladle) to add the batter to thepan. Use the bottom of the scoop or ladle to spread out the batter into a nice,even circle. Reduce the heat to medium-low.

6.Pick up your cinnamon fillingbaggie and squeeze the filling into the corner. Starting at the center of thepancake squeeze the cinnamon filling on top of the pancake batter in a swirl(just as you see in a cinnamon roll).

7. Cook the pancakes 3 to 4 minutes, oruntil bubbles begin popping on top of the pancake and it is golden brown on thebottom.

8. Slide a thin spatula underneath the pancake and gently but quickly flipit over. Cook an additional 2 to 3 minutes, until the other side is golden aswell. When you flip the pancake onto a plate, you will see that the cinnamonfilling has created a crater-swirl of cinnamon.

9. Wipe out the pan with a papertowel, and repeat with the remaining pancake batter and cinnamon filling.

10. Servepancakes topped with a drizzle of cream cheese icing.

Lemme Warm You UP!

Here's a little something to keep ya warm on this dreary 5280 day!!

Whip up a batch... and then invite someone to eat it .. duh. LOL

I usually skip the blend part.. i like my shit chunky!!!

3-4 chicken breasts

hot sauce

2 cans chicken broth

3 cans italian stewed tomatoes

1 bunch cilantro, with the stems removed

salt to taste

2 cans black beans, drained and rinsed

2 cans sweet corn, drained and rinsed

Stick the chicken breasts in a crock pot and smother with hot sauce.

Cook on high for three hours or until you can shred up the chicken with a fork.

Add the chicken broth.

Blend the stewed tomatoes until smooth then add the cilantro and pulse a few times.

Add the tomato mixture to the crock pot, then the corn and black beans and salt.

Let cook for about 1 more hour.

Serve in individual bowls.

Top with cheddar cheese, sour cream, and tortilla chips.

The other day i was seriously craving a grilled cheese and some hot wings...

i was kickin it SOLO... i didn't really think that making them both was a very viable option....plus it was about 10 at night.

SO as i'm sitting there i decided to throw them all together... i mean who doesn't like that!! I'm sure there are some... but let's be honest.. i don't care. HAHA.

Enter the Buffalo Chicken Grilled Cheese. Yep. And it was Goood!!!

Ingredients for 2 sandwiches;

1/2 cup cooked and shredded chicken

1/8 cup EACH of diced up carrots and celery

1 tblsp Mayo

Hot Sauce to taste ( i used about 4 tblsp)

4 slices of bread

Butter

Cheese of your choosing ( I choose white american and shredded colby jack)

Mix Chicken, carrots, celery, mayo and hot sauce together

Assemble the sam-damn-wiches and throw on grill like you would a regular grilled cheese.

Let them sit to cool down (IMPORTANT) lol

Stuff your face

It's been quite a few weeks in and around my life.

Lessons have been learned....lives have been lost...... forgiveness was granted... shots were fired and gauntlets were thrown....

But it's not all bad, as life rarely ever is, so Let me help you out on what i learned and what i happen to ponder on....

* Work is for the birds.. i need a winning lotto ticket... or a golden ticket.. either or.

* Just because someone doesn't show you love in the way that you want to be loved.... doesn't mean they don't love you with all their heart.... it's kinda like the same as grieving... everyone does it in their own way.

* Once someone's gone...there's no way to go back and tell them how much you cared/loved/appreciated them... so if you love someone.... Whether it be homie, lover or friend.. .. tell them as many times as you see them. Call them. Write them. Show Them!

*You never heard anyone say that they regretted telling someone they loved them too much. and you rarely hear someone tire of hearing it.

* You can't make someone love you. They Either do.. or they (in my case, stupidly) don't.

* I should have been around in the Golden Hollywood age... I'd have been a star. #GlamToDeath

*not glam.... nose hairs. ewww

* Friends are great.... Good Friends are Awesome..... and Best friends are the rarest of rare diamonds... make sure you polish that friendship often and keep it sparkling.

* Choco Tacos are still the bees.... every time!

* There will ALWAYS be some douche bag who will try to fuck up your day.

Do Not Allow This Ridunkulousness. These people are sad and talent less... you can't punish them anymore than that.

*Quit your bitchen! No one really cares. Trust me.

* The world is a cold cold place... get over it.

*Cuddy Buddies make the above statement less chilling... LOL

* Just 'Letting Go' sounds so much easier than actually is... I mean at some point shouldn't you fight for SOMETHING?? Love for instance...

* Imitation is not flattering at all.. it's frustrating and seriously irritating..... like wet jeans.... just chaps the ass.

*speaking of irritating... the sound of flip flops in the office... like nails on a chalkboard.

* Slow love songs do not always set the 'mood'... but telling me we're good friends certainly will.

* If you have never fondue'd.. you're totally missing out and let me know.. i'll do it for you!

Ever notice how when you're depressed or emotionally drained, that your heartbeat is stronger than normal?

At times it seems as if it's going to beat right though your chest.....

It's your heart’s way of letting you know that it's still there.

It may have been broken, it may have been ripped out of your chest and stepped on but it still holds life.
