Memorial Day Weekend..... the kick off to the summer and the kick off to BBQ season!!!
I don't know about you, but i love BBQ season.. it's really the only thing i like about summer!! I hate the heat... but with the right spread.. one can forget all about that!! 
when it comes to condiments... i hate the difficulty in using most if them during a bbq.. because we all know.. you hold the plate in one hand and decorate your burger with the other. Now what happens when all the lids are closed.. the bottles are clogged.. .and the mayo has been out too long?? A bad Burger experience!!
So, as always, i have a solution...

Wonton Heaven

I go thru spurts of..what i like to eat...and by spurts i mean i will eat carne asada tacos every day for week or two... that's how I do ... so i feel i'm about ready to hit an asian kinda spurt... sushi.. pho and goodies of that nature... today though...  I feel like some crab cheese wontons.. so i dug thru my old recipes and found this bit of a gem...

Crab and Cream Cheese Wontons

4 ounces cream cheese, softened
2 green onions, minced
1/2 teaspoon minced fresh ginger
1/4 pound crab meat (not the imitation kind either!)
kosher salt, to taste
20 wonton wrappers

2 cups canola oil (for frying)


1. In a medium bowl, use a sturdy spoon to mix cream cheese, onions, fresh ginger, crab meat and salt.
2. Assemble the wontons: Place a wonton wrapper on a work surface. 
3. Dip your finger in a bowl of water and then rub edges of the wonton wrapper to dampen. 
4. Place a heaping teaspoonful of the crab mixure into the center of the wonton wrapper. 
5. Fold the bottom corner of the wonton wrapper over the filling to meet the opposite corner (you'll end up with a triangle). 
6. Press the edges lightly to seal. Bring the left and right corners up to the center and seal those together. 
7. Place on a greased or parchment-lined baking sheet. Continue with remaining wonton wrappers- an assembly line of doing 3 or 4 at a time works well.
8. Heat oil in a medium to large saucepan over medium-high heat. Oil is hot enough when a drop of water flicked into the oil creates a crackling sound. 
9. Fry wontons in hot oil until golden brown and crispy, about 3 to 4 minutes on each side. Transfer to a paper towel-lined plate.
4. Serve immediately.

*I serve these with plum sauce or a sweet and sour sauce for dipping.

Soups On

On a rainy day such as this...oh AND i'm calls for Chicken and Gnocchi Soup!!!!
This would have been great to start this morning..... i'm just sayin :)

1¼ lb. boneless skinless chicken thighs, cut into pieces
1 cup chopped carrots
¼ cup chopped celery
½ cup chopped onion
1 teaspoon dried thyme leaves
1 (32 oz) container of chicken broth
1 can condensed cream of mushroom soup
1 package (16 oz) gnocci (if frozen, be sure to thaw first)
1 package (9 oz) frozen baby sweet peas, thawed

1. In 10-inch nonstick skillet, cook chicken 5-7 minutes, stirring frequently, until browned and no longer pink in the center.
2. Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix chicken and remaining ingredients except gnocchi and peas.
3. Cover; cook on low heat setting 8 to 10 hours.
4. Increase heat setting to high. Stir in gnocchi and peas.
5. Cover; cook about 30 minutes longer or until gnocchi and peas are tender.

Feel my Phyllo up!

I love phyllo... and if you don't know what it is... well lemme help ya out!!
The thing i probably like the most is the fact that it tastes like it's fried... but it's not!!
So yay on non fried ... fried tasting foods!! Now it's can be kind of a process working with phyllo... so don't be discouraged or frustrated... just be patient!

Spanakopita is a Greek style spinach and feta pie wrapped in light and flaky golden brown phyllo dough. The abundance of fresh herbs including dill as what truly makes this pie special.

2 pounds spinach, steamed, squeezed, drained and chopped
1cup feta, crumbled
1/4 cup dill, chopped
1/4 cup parsley, chopped
1/4 cup green onions, sliced
3 eggs, lightly beaten
salt and pepper to taste
1/4 cup olive oil
12 sheets phyllo dough
1. Mix the spinach, feta, dill, parsley, green onions, eggs, salt and pepper in a large bowl.
2. Brush the bottom of an 8x8 inch baking pan with olive oil.
3. Brush the top of a sheet of phyllo dough with olive oil and place it in the pan. (You may have to cut the phyllo dough to fit the pan.) Repeat until you have 6 layers.
4. Place the spinach mixture on top of the phyllo dough.
5. Brush the top of a sheet of phyllo dough with olive oil and place it on the spinach. Repeat until you have 6 layers.
6.Bake in a preheated 350F oven until golden brown on top, about 30-50 minutes.

Pull that B out and ENJOY!!!!

The 7 Deadly 'Disney' Sins

Artist Chris Hill has taken what we know and love about the Disney Princess' and gave them kind of a make over... and not in the most of flattering of lights.. although he insists that he did not mean to portray them as evil... but as over comers... hmm. You be the judge...
Belle: Vanity... not necessarily her own... but the whole story around her is basically focused on Beauty.... Gaston.. the Beast... you get it. 
Ariel: Greed... not so much as never being satisfied with what lies under the sea...looking for that greener grass and such.... 
Snow White: Gluttony.... it was the bite that was her undoing... simple as that.
Cinderella: Lust...dreaming of a life with the Prince... not being able to stay away from his arms after the midnight chime.... 
Aurora: Sloth..... "Sleeping Beauty" duh. 
Jasmine: Wrath..... Geez Louise she has a tiger as a pet...
