The First of a long line of Specials

So last week... or maybe two weeks ago... i made my friend a very special brunch item..becasue he had NEVER had a BENEDICT!!! can you imagine?!?!?


I had been to the restaurant "Root Down" in Denver... and they had the most amazing Benedict you could ask for, so i replicated it for him as his introductory... cuz well.. that's just how i DO!

Instead of an English muffin, i used Quinoa... YUM! and instead of Canadian Bacon, i used turkey... top that with a poached egg... some Hollandaise and chopped tomatoes... OYE VAY that's delicious!!!


On the side i pan fried a combination of russet and sweet potatoes with a spice blend that will knock your socks off!! (recipe to follow) 


For the greenery... simple was best.. lemon dressed greens... arugala or frisee generally work the best... but any green will suffice. 


Potato Seasoning
1 tablespoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon granulated sugar
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper


Throw seasoning on after potatoes are cooked or at table and enjoy!!

Had to finish it off with a short stack and strawberry syrup!!
